In ancient times fresh noodles were made from flour, water, and salt. It was in the Middle Ages, during the Arab rule of Sicily, that people first began to dry and store noodle dough, a process which suddenly allowed pasta to spread first throughout Italy and then all over the world. The dozens of types of pasta known today include not only spaghetti and maccheroni, but also penne, tubetti, lumaconi, conchiglie, bucatini, fusilli, capelli d'angelo, rigatoni, linguine, ziti, and vermicelli.

The Teatro alla Scala, Milan was built on the site of the ancient church of Santa Maria della Scala and opened in 1778 with a production of Antonio Salieri's "L'Europa riconosciuta". It was badly damaged by bombing in 1943, but restored and reopened in 1946 with a concert conducted by Arturo Toscanini. It closed for restoration and modernization at the end of 2001 and reopened to the public in December 2004 with the same opera by Salieri that had inaugurated the theater 226 years earlier. The Scala is known as an opera house all over the world, but it is also the home of a world-class ballet company.

Many regions claim to be the home of gelato (ice cream), but in fact it seems to have spread from Sicily, after being introduced there by the Arabs. Indeed ice cream is believed to have originated from the ancient sorbet - from the Arabic word "sherbet" - which was invented by them to combat the searing heat of their desert home and taken by them to Sicily, where local ingredients were added. Sicilian ice cream is still renowned today, both for the exotic flavors ranging from mulberry to prickly pear and for the way in which it is served, in cones or cups but also sandwiched in the middle of a brioche. Throughout Italy, ice cream is served not in scoops but with a spatula, with the result that the size of the portions varies and depends on the whim of the person who is serving.

Italian universities (università), are divided into a number of different faculties (facoltà). The course of study ends with the award of the laurea . The first European university was the scuola salernitana , the medical school founded in Salerno in the 11th century. The universities of Bologna, Padua and, Naples are almost equally ancient.
